Tandoori Prawns

Title :: Tandoori Prawns

Ingredients ::
  • 12 no : prawn jumbo, fresh
  • 250 gms : butter for basting

  • Ingredients for the first Marination
  • 100 ml : lemon juice, fresh
  • 15 gms : garlic paste
  • 15 gms : ginger paste
  • 1 tsp : peppercorn powder white
  • Salt to taste.

  • Ingredients for the second Marination
  • 130 gram : yoghurt
  • 90 ml : cream, fresh
  • 60 gms : cheese cheddar
  • 10 gms : ginger paste strained
  • 10 gms : garlic paste strained
  • 2 ½ gms : ajwain
  • 3 gms : peppercorn powder white
  • 1/8 teaspoon : cardamon green powder
  • 1/8 teaspoon : cinnamon powder
  • 1/8 teaspoon : nutmeg
  • 1/8 teaspoon : mace powder
  • Salt to taste.
Description ::
This one is an example of seafood tandoori....

Shell the prawns, retain tails, de-vein, wash and pat dry.

The First Marination:
Mix all ingredients in a bowl, rub prawns with this marinade and keep for half an hour. Squeeze prawns gently between palms to remove excess moisture. Keep chilled.

The Second Marination:
Grate cheese. Put yoghurt & cream in a  bowl, add remaining ingredients and whisk. Rub prawns with this marinade and refrigerate for an hour.

Cooking:
Skewer the prawns, keeping a tray underneath to collect the drippings, or arrange in a greased roasting tray. Grill for about 5 to 7 minutes. Remove and hang the skewers to allow the excess moisture to drip off . Baste with butter and grill again for 4 minutes
Remove from the skewer and serve with desired garnishes.

Sounds delicious! I brought back some aijwan from Nepal; it's somewhere at the back of a cupboard - I bet I forgot to label it and it probably looks like some evil old weed by now.
