Title :: Tandoori Chicken, (western style)

Ingredients ::
  • Chicken quarters. (skinned)
  • 1 tsp of garum masala.
  • 1 tsp of ginger pulp.
  • 1 tsp of garlic pulp.
  • 1 tsp of chilli powder.
  • 1 tsp ofground coriander.
  • 1 tsp of salt.
  • ½ tsp coriander.
  • 1 tbsp lemon juice.
  • 2 tbsp corn oil.
  • drop of red food colouring.
  • Plain yogurt
  • Mix all the ingredients together, add the chicken quarters & leave for 3-4 hours.
  • Preheat a very hot oven & bake the chicken pieces in an oven proof dish for 30mins.
  • An alternative method is, after marinating, bbq the chicken in the normal way.
  • Serve with rice or green salad.
Description ::
Tandoori Chicken, (western style)
Of course not quite the real thing as we don't have a Tandoor, but a good substitute all the same.
Ideally you'll need a very hot conventional oven or a gas bbq with a hood on it.

Mix all the ingredients together, add the chicken quarters & leave for 3-4 hours.
Preheat a very hot oven & bake the chicken pieces in an oven proof dish for 30mins.
An alternative method is, after marinating, bbq the chicken in the normal way.
Serve with rice or green salad.

Are the real tandoori chickens red in color? If so, how does that happen?

I have one that is similar:

4 cloves garlic
2 Inches of ginger
2 tablespoon of corriander (or roasted seeds ground)
1 tablespoon of Garam Masala
1-2 teaspoons chilli powder (Or to tatse)
1 teaspoon ground back pepper
1 teaspoon salt
Juice of 1/2 lemon
6 tablespoons of yoghurt

Grind and Mix all of the ingredients (Apart from the yoghurt and lemon)

Slash ckhicken with knife.

Mix above with lemon and yogurt. Add slashed chicken pieces.

Marinade overnight.

Pre-heat oven to its hottest for 30 mins

Arrange on wire tray and cook for 30 mins (or until done) basting and turning with ghee or oil

Eat!

Yum!

(I serve mine with french fries and coleslaw!)

Almost invariably red colouring is used in most places. Otherwise the turmeric & red chilly are the only spices that add natural colour.
