Carrots are used as baits to encourage horses and other animals to give of their best in races. Dangling the proverbial carrot is a means of similarly exploiting individuals to extract the best out of them – the discard after completion of the mission is sometimes hard to digest. The carrot in these cases might be out-of-turn promotion or training in other organizations or journey overseas etcetera.
However, the carrot that I am writing about is the one and only vegetable that we love in the raw in our salads and, the gajar-ki-halwa, is a sweet dish that is as tasty as it is healthy and irresistible. It is prepared out of those pink, soft, sweet variety and not the yellow, hard types. The carrots are cleaned, grated and cooked in milk with sugar to taste. Once it is done, the mixture becomes sticky – now add fresh ghee as necessary considering the probable mix of persons to be served in mind and their dietary restrictions. The gajar-ki-halwa is flavored with cardamom powder and garnished with kish-mish, cashew nuts and almonds. The preparation is allowed to cool in normal temperatures and served either as stand alone or with parathas or puries. For those with a European bent of mind, the halwa can be used as a stuffing for sandwiches – it would be equally delicious.
