SKEWER AND EAT A range of kebabs to dig into
A biryani for the Hyderabadi has to be dished out of lamb or chicken, the long grained fragrant rice stewed in the juices of the meat and the aroma of the spices just right to beckon you like Tom's cheese beckons Jerry out of his hole.
But there is more to the world of biryani than just this, that is what Venugopal Rao of Amrutha Castle wants to prove at the Biryani and Kebab festival that will be on till June 25.
In the evening, step into the Salzburg Street and the range includes Coorgi Biryani, Pan, Mapala, Kozhikode Kerala Biryani. What's different about some of these biryanis is that instead of meat, they use fish.
Faster cooking, more flavourful and with a range of flavours, fish lends itself to more experimentation.
"The biryanis from deep south have as rich a tradition as any other, but the world has not tasted them. Instead of the kacchi gosht like the Hyderabadi or the sabj biryani like Lucknowi, we are experimenting with something that involves cooking the rice to 75 per cent and then adding the marinated fish so that the rice soaks in the flavours," says the chef. The other thing about these biryanis is their spice.
"Kerala is known for its spices, so the biryanis that you can dig into have their spice quotient as the USP," says the chef.
But the kebabs have a different story.
How about meat marinated in rum overnight and skewered to perfection?
Get the idea? Yeah. This is one of the kebabs dished out at the restaurant among the scores of other.
When it is raining you have to dig into such stuff. Agree or disagree?

Ate very good Biriyani from Shabad near the museum in Hyderabad yesterday.

I asked for Bheja but I was told that they make it for breakfast only. Tried out Kidney Masala from Paradise and liked it. Now comparing the Biryani's I feel the one made by Shabad is a shade better than Paradise.
