Mixed Vegetable Curry

Title :: Mixed Vegetable Curry

Ingredients ::
  • Vegetables - whatever you like eg:
  • potato
  • pumpkin
  • green beans
  • cauliflour
  • broccoli
  • carrot
  • eggplant

  • i usually use whatever i have, and cut into bite size chunks. generally i end up with enough vegetables to fill a wok 2/3 full.

  • Spices
  • 1/2 cup fresh coconut (or dessicated soaked in hot water)
  • chilli to taste
  • 2tblspn white poppy seeds
  • 1 1/4 tspn salt
  • 1 tspn garam masal

  • Also
  • 3 medium tomatoes, or one tin
  • 1/2 cup natural yoghurt
Description ::
Delicious quick vegetable curry using whatever vegetables you have to hand.

Put the vegetables in the wok (or large saucepan) and add 250ml water. Cover, bring to the boil then turn down and simmer until vegetables are just cooked.

Put coconut, poppy seeds, chili, salt and 150ml water in a blender and mix to a paste.

When the vegetables are cooked add the spice mix, and another 150ml of water and simmer for another five minutes.

Now add the tomatoes, yoghurt and garam masala, stir gently and simmer for another 2-3 minutes.

Serve with rice and enjoy.

(I have been known to live on this for a week, or until the wok is empty...)

This one is south Indian style and rightly served with pappads...

with all the vegetables in the curry, all i need is some rice and pappads and it's a complete meal. in fact, i'm having it tonight. again. :)

Yummy, now that looks truly great! I would love to cook that for dinner tonight, but wonder if dried coconut flakes could also be used.

yash, according to the kitchen queen madhur :

'as a substitute for freshly grated coconut, you can use unsweetened dessicated coconut...to get the equivalent of 60gm of freshly grated coconut, take 30gm coconut and soak it in 4tbslspn water for about an hour.'
