we went out for dinner to celebrate new year's eve and, amongst other things, i had a wonderful lime pickle - full of lime, garlic, chili and very moist.

does anybody have a recipe for lime pickle they can share with me? (jyotirmoy, i know you're back from your christmas travels...)

Here you are:-
Ingredients
25 medium-sized ripe lemons
1 teaspoon turmeric
1/2 cup salt
1/2 cup red chili powder
1 teaspoon fenugreek seeds
20 garlic cloves, peeled
15 ripe lemons, juiced

Cut each lemon into four pieces, and mix with salt, turmeric and lemon juice. Mix well and keep aside in a plastic container. Mix once every day for three days. On fourth day, add chili powder and lightly crushed garlic. Heat the fenugreek seeds, grind into a powder and add to the above. Mix well. Put a little sauce into your mouth, and if a lot water comes into the mouth, then the salt is enough. Otherwise add a little bit. If you don't eat a lot of salt, you can always store in the refrigerator.

mr iwtgb thought there was something like lotus root in the pickle. is this something that indians might put in a pickle?

oh, and thanks for the recipe.

i was just thinking that my overwhelming memory of 'midnight's children' which i read about twenty years ago, is of the pickles, and chutneys and kasaundies (?) in the story. even at the time, it was one of the really significant elements of the book.

No we don't put lotus stem in the lemon pickle. Kasundi is shredded green mangoes in pungent mustard paste.

Mr. I W may be right in his observations: there is a place where whole pickled lime and lotus root slices turn up in the same "Indian" oil pickle, and quite commonly, and that is the famous PACHRANGA PICKLE of Punjab. It would be served in Punjabi places with Tandoori nans and chicken, and would also have green chillies [whole] green mango chunks, amalaka/aonla/Emblica [Phyllanthus], Indian capers [Capparis spp., phog/teent].

This pickle is widely available in 28 oz tins at avery reasonable price, and travels well in that form. Look for that name blazoned on a blue and green can, very easily available at Indian grocery stores, about USD2/28 oz.
