Title :: Shorshey Mutton

Ingredients ::
  • 20 gms oil
  • 2 bay leaves
  • 1 tsp coriander seeds
  • 1 tbsp ginger/garlic paste
  • 200 gms chopped onion
  • 1 tbsp chopped green chilies
  • 400 gms mutton cubes
  • 100 gms mustard, ground to a paste.
  • 1 tsp red chili powder
  • ½ tsp turmeric powder
  • 1 tbsp chopped coriander leaves
  • Salt to taste
  • Hot water as required
Description ::
This is mutton cooked in a tangy mustard based gravy. It is a Bengali preparation.

Sauté bay leaves and coriander seeds in a saucepan.  Add ginger/garlic paste, onions and green chilies.  Sauté for four minutes and add mutton and salt.  
Cook for ten minutes.
Add hot water and the remaining ingredients.  
Cook till meat is tender.

mmm, that sounds great, i'll try it out next time I get some lamb (which is fairly often in this house).

Thanks Jyoti. last two nights I have cooked lamb biriyani (don't know how I got that) and tonight your mushroom masala. Great. The only ingredients I haven't been able to get so far are ghee (used oil), coriander leaves and of course mutton, using lamb instead. But I have only tried at supermarket. I will try shorshey Mutton next week.

Melt white cooking butter in a pan & let the water evaporate out... heat till it is clarified. This is closest to Ghee. You can use a mix of this & oil to cook. Use corn oil as it is bland & its smoking temperature is close to milk fat.

I must admit I have heard of this dish but never actually tasted or tried it. I think I am going to give this a try soon.

A result of Bengali's obsession with mustard paste....
You can use chicken too but for me a bit of fatty mutton tho...

btw, how's di going with the Indian meals?

iwtgb, I have tried Woolies and will have a look in Coles next week. No Asian grocery here but I will hunt out what I need. Di preferred the biriyani to the mushroom masala. I will try the Shorshey mutton next week.

Well Been working on the Recipes System All night,,,,,,Well have gotten it to work Partically but it still isnt lookin all that good ....Could take a week more to fix up some Garbled Charecters!
