The following is one of the best articles I have seen re the glycemic index (how close a food is to being pure sugar) of various Indian foods:

http://www.rssdi.org...pt/article2.pdf

Glycemic and Lipemic Response to Various Regional Meals and South Indian Snacks.

UV Mani, IU Mani, UM Iyer, B Prakash, T Manivannan, S Campbell, S Chandalia.
Dept. of Foods & Nutrition, M.S. University of Baroda, Gujarat, India.
INT. J. DIAB. DEV. COUNTRIES (1997), VOL. 17:75-81.

It is a very comprehensive discussion of Indian foods, their preparation, and diabetes.

The main website, http://www.rssdi.org/ is for the research society for the study of diabetes in India.

Thanks. I think I'll share this with the Diabetes Educators at my local hospital; they were certainly useless when I was planning my last visit to Mom India!
