Sprouted Mung curry

Title :: Sprouted Mung curry

Ingredients ::
  • 1 cup sprouted moong beans
  • 1 green chili
  • 1 stalk curry leaves
  • 1teaspoon coriander leaves finely chopped
  • 4 pinches asafetida
  • 1/2  teaspoon mustard & cumin seeds mixed
  • 2 tablespoons oil
  • salt to taste
  • 1/2  cup tamarind water extract

  • ***MAKE PASTE OF***
  • 1/2 fresh coconut -- (1 cup grated)
  • 1 teaspoon coriander seeds
  • 3 dry whole red chilis
  • 1/2  teaspoon methi -- (fenugreek) seeds
  • 1/2  teaspoon cumin seeds
Description ::
Sprouted mung curry with coconut

Add water to sprouts till covered. Add salt and whole green chile. Boil and simmer covered till sprouts are tender. Heat oil in a heavy pan, add cumin and mustard seeds. Allow to splutter, add curry leaves and asafetida. Stir, add paste, stir, add tamarind water, bring to a boil. Add sprouts, and some of its drained water. Simmer for 3-4 minutes. Serve hot with rice or roti.

The way I learned how to do it from a friend in Goa is, you place the required quantity into a largish piece of cloth and tie the four corners and hang it up against the faucet. keep the bag damp and in a couple of days the beans will start to sprout.

I use them in stir fries, salads, it is much better than buying them from the store.

You can sprout most beans in the same way.

Hi Kirsty, I realised after I had posted my message that here in Dubai my kitchen is quite warm and the humidity levels are quite high. You may need to keep your mung in a warm place to sprout. You also need to be sure that the cloth is damp.

I saw them at a mall. You can surely get it in Mumbai, the one I saw was made in Mumbai, a plastic contraption

you can use jars, or clear lidded containers that create little greenhouses.

just make sure you drain them after watering.

That's right, I have a book by Madhur Jaffrey where she explains how to sprout beans in a jar. I just find this equally good. I live in  hot humid country might as well put the weather to some use.
