Mung Bean and Tamarind Curry

Title :: Mung Bean and Tamarind Curry

Ingredients ::
  • 25g tamarind pulp
  • 250g Mung Beans
  • 3 fresh green chillies, finely sliced
  • 2 cloves garlic, finely sliced
  • 1/2 tsp tumeric
  • 1/2 tsp chilli powder
  • a small bunch of fresh coriander, finely chopped
  • salt

  • Serves 4
Description ::
An easy Tamil dish that is often served at wedding feasts.

Put the tamarind pulp in abowl and cover with 225ml boiling water. Leave to soak for 20-30 mins. Sieve the mixture into a bowl, discarding the seeds and skin. Set aside.
Meanwhile, wash the mung beans and then place in a large saucepan with 725ml water and the green chillies, garlic, tumeric and chilli powder. Place over a high heat and bring to the boil, then lower the heat and simmer for 30 mins, stirring occasionally.
When the mung beans are soft, add the tamarind liquid and salt to taste. Stir in the coriander and serve hot.

Hi Kirsty,
I have posted a variation on the mung bean curry. It is good, I make it fairly often, when my carnivorous family agrees to stay off the meat.
