Ingredients ::
  • 200g potatoes, peeled
  • 200g cauliflower
  • 4 tbsp vegetable oil
  • 1 tsp fennel seeds
  • 1 large onion, finely chopped
  • 1/2 tsp chilli powder
  • 1/2 tsp tumeric
  • 4 tbsp tomato puree
  • 4 tomatoes quartered
  • 100ml milk
  • a small bunch of fresh coriander, chopped
  • Salt

  • Serves 4
Description ::
South Indian style Aloo Gobi. It's quick! It's easy! It's delicous!

Cut the potatoes into large chunks and break the cauliflower into florets.
Heat the oil in a medium saucepan and add the fennel. Cook until golden and then add the onion and cook for 10 minutes. Add the tumeric and chilli and cook for 2 minutes then add the tomato paste.
Add the cauliflower, potato, tomatoes, milk, some salt and 100ml of water. Cook over a medium heat stirring frequently to prevent the milk splitting. When the potatoes are completely tender add the coriander, mix well and serve hot.
