Ingredients ::
  • 3 tbsp oil
  • 2 green chillies
  • 3 cloves garlic, sliced
  • 2.5cm ginger, peeled and sliced
  • 10 curry leaves
  • 1 stick cinnamon
  • 5 cardamom
  • pods
  • 5 black peppercorns
  • 5 cloves
  • 1 large onion sliced
  • 1 tomato sliced
  • !tbsp ground coriander
  • 1/4 tsp chilli powder
  • 400g chicken fillets
  • 2 tbsp plain yoghurt
  • salt

  • Serves 4
Description ::
This is a recipe from the Christian community in Kottayam. It makes a nice simple dinner with some bread.

Heat the oil in a large wok or frying pan. When hot add the green chillies, garlic, ginger, curry leaves, peppercorns and cloves. Stir fry over a medium heat until the garlic and ginger are brown.
Add the onion and fry until golden brown.
Add the tomato, ground coriander, tumeric and chilli powder and a little salt. Cook for 5 minutes until the tomato starts to break down.
Meanwhile cut the chicken into 2.5cm pieces. Add to the pan and stir well. Pour in 225ml water and cook for a further 10 minutes, stirring occasionally.
Reduce the heat under the pan to low, add the yoghurt, mix well  and remove from the heat. Serve immediately.

I think I'd better call it a day now, my daughters back from playgroup and wants HER lunch!
