Ingredients ::
  • 5tbsp ghee, plus extra for greasing
  • 25g cashew nuts
  • 200g dessicated coconut
  • 400g sugar
  • 1 tsp ground cardamon

  • Makes 15 approx
Description ::
My son's favourite!

In a small frying pan, heat 1 tbsp of the ghee. Add the cashew nuts an cook for 2-3 minutes until golden. Remove from the heat and drain on kitchen paper. Grease a baking tin with a little ghee and set aside.
Place the coconut in a blender and grind for 1 minute. Set aside.
In a heavy saucepan, bring 450ml water to the boil, add the sugar and cook over a medium heat for 10 minutes stirring frequently until the sugar syrup is thick.
Add the coconut and the remaining 4tbsp of ghee and cook over a low heat, stirring constantly until the mixture comes away easily from the side of the pan.
Add the fried cashew nuts and cardamom, stirring well. Spread the mixture into the tin and leave to cool. Chill for 4 hours or until set. Cut into pieces and serve cold.
