Ingredients ::
  • 160g Semolina
  • 80g Rice Flour
  • 50g freshly grated or dessicated coconut
  • 1 red onion finely chopped
  • 2 green chillies finely sliced
  • 2.5cm ginger peeled and grated
  • 1tsp cumin seeds
  • A few curry leaves
  • Oil for frying
  • salt

  • Makes 8
Description ::
Easier to make than the usual Dosa because it doesn't need all that soaking and fermenting time!

Place the semolina and rice flour in a bowl and slowly pour in 700ml water mixing well. Stir in the coconut, chillies, ginger, cumin seeds, curry leaves and salt
Heat a griddle or large frying pan. Rub it with a little oil, then pour on a ladle of batter, leeting it spread out. Cook for 2-3 minutes, or until crisp and brown underneath.
Turn it over (if it is not cooked enough it will disintegrate - you soon get the hang of timing it!).
Cook for a further 2 minutes and set aside in a warm place.
Repeat with the remaining batter, stirring it well before you add it to the pan. Serve hot.

oops that should read 50g dessicated coconut. I keep getting a message that won't let me edit the recipe! Something about dynamic IMG error???? Any help?
