Title :: Pickled Beetroots
Author :: sugarnspice
Category :: 1] Snacks & Starters
Ingredients ::
  • Quarter Teacup Water
  • 1 Tablespoon Sugar
  • Quarter Teacup Vinegar
  • 3 Medium Beetroots
Description ::
Simple easy to make sweet and sour pickle

Boil and skin the beetroots, and make slices from them.
Make a solution of vinegar, water and sugar. Soak the vegetables in the solution.  When the beetroots have absorbed the vinegar and sugar, serve as pickle.

We in Bengal use lemon juice instead of vinegar. Add sliced onions too.

Yeah we do that. We also add sliced boiled carrots. Tastes better if left in the fridge for a few hours.

You may not hate it when it is soaked in this lemon sugar mix along with onions. The idea behind boiling/steaming of the beetroots & carrots is to tenderise them so that they absorb the tangy marrinade. I forgot about thinly sliced cucumbers that we also add, that is typical Bengali salad!!!!!

This is not a typical restaurant food, mostly eaten at home in the winter. It is only now that Bengali cuisine is coming out of household kitchens.
