Uno de Cada: Cold Soup on a Hot day
One large cucumber
One medium onion
One large tomato
One Ripe mango
One Bell pepper (red or yellow)
One pablano pepper (marinated/pickled)
4 Ripe Avacado, 1- 2 roasted habanero pepper, 1/2cup sweet sherry, 1/2 cup coconut water, 1/2 cup light cream (spicing to taste=sea salt, crushed white pepper, garlic powder, ginger powder, caraway seed, green cardamom)
In a blender (or hand mixer) mix chunks of ripe avacado, habanero pepper, sherry, coconut water and and pinch of spices. Sieve the mixture into a pot with light cream. Simmer for few minutes and remove from microwave. Chill in refrigerator for 2-4 hours.
Chop skinned cucumber, tomato, mango, seeded bell pepper and onion into small diced cubes. Sprinkle salt and fresh lemon mix thoroughly. Sometimes for variation I have added a small sweet green apple. Instead of onion, one can diced bulbs of green onion or scallion
In a soup bowl pour in the avacado soup, spoon in the mixture into the soup, and put sliced marinated pablano pepper on top. I have also substituted 1/2 cup of yoghurt instead of light cream.
