I guess its pretty important (not for the experts) for a lotta folks especially outside India to get to know the INGREDIENTS used in Indian cooking.
So I just thought of starting a topic on this. Please add your own or correct the below list.
NAME - INDIAN NAME : DESCRIPTION
Asafoetida - Hing : Dried gum resin from the root of various Iranian and East Indian plants. Has a strong fetid odor - definitely an acquired taste.

Besan - Besan : Flour of dried chick peas.

Cardamom - Elaichi : Dried fruit of a plant. Mostly the seeds are used. Seeds of 4 pods measure approximately 1/4 t.

Coriander - dhania : Aromatic herb of the parsley family. Sold as cilantro or chinese parsley. Also sold as seed or dry powder.

Dals - Dal : Hindi name for all members of the legume or pulse family. Commonly used are: Arhar, Channa, Masur, Mung, Labia (black-eyed peas), Rajma (red kidney beans).

you seem to have started something significant here, Chetan. I would suggest you think about splitting it up into several tables, such as spices, herbs, pulses, vegetables, nuts, condiments, etc. I would suggest one or two entries be looked at again, but that's for another day for me.
It might be rewarding to be able to include pics of some of the more unusual items, or even all of them??

I have been through every single book authored by Jiggs Kalra and he has not once made a mention of Sumac (or Sumak). So, I feel safe to say that it may not find a place in Indian regional cuisine; or ever did, going by a very reliable book on 'Indian Food: A Historical Companion' by K. T. Achaya.
Sumac, a red berry from a shrub, lends an astringent sour flavour to cuisines of Iran, Iraq, Lebanon, and Syria. A sprinkle of ground sumac is used as a garnish on salads, kebabs, and fish. Sumac juice is used just as lemon juice is.
Also, I sprinkle it on flatbreads from the region; or on Indian flatbreads for a quick boost of flavours. So how do you make use of Sumac in your kitchen?

Yesterday I picked powdered Sumac from local Halal shop. It is just like Aamchur powder.. taste is sour and more close to Amla.Yesterday I marinated chicken with little sumac powder and salt and made regular curry it brings sourness to curry.
Phodni thanks for bringing up this sumac spice. I see lot more uses in Indian cooking. I will keep posting as I make use of it.

In India there number of ingredients are used while preparing different recipes.As in above posts it is described briefly about the ingredients.Now-a-days there is number of organizations are working for manufacturing different spices from different ingredients.In the busy life it take less time for preparing different recipes by using these spices.

I was given sumac by a Lebanese friend. Her mother uses it to add zing to a fairly plain potato salad. Meanwhile a Persian friend related how her mother used it on plain rice. I've not tried to buy sumac in Tokyo, but aamchur powder IS available here, which may please the Persian. THANK YOU.
