I still havent gotten over the Biryani you served when I was at your place for the first time.It was the most amazing biryani I have ever tasted.
Please let us have the recipie here...and also any variation that you would suggest to it like EGG Biryani , Veg biryani .
FYI : Please dont be upset at Veg / EGG Biryani , but at home we are Vegetarians so I have no choice but to ask .

Sorry missed this post.
I dont hold any secrets, it's just that I never document my recipes. The positive outcome of that is I get to play around with the structure which sometimes results in an improved version.
Tell you what, next time you come over I'll measure everything and take pictures of the process.
Greater experts -Gautamda and Jyotida may scoff at a boneless chicken version but it's more practical when I have many guests over so they can eat it with a fork. My table can seat only 6 and some of my parties can get wild.

500g Chicken breast meat cut into cubes
- 1.5 cup dahi
- 1 tsp kasoori methi finely chopped
- 3 tbsps mild red chilli paste
- 1\2 cup tomato puree
- 2 tsps garam masala
- 2 tsps. jeera powder
- 1 tsp dhania powder
1 cup onions pulsed in a grinder ( almost a paste)
3 tbsps oil
3 cups basmati rice
1 full piece Nutmeg
2 " stick cinnamon
2 black cardamoms
1 star anise
3 tbsp Ghee
0.5 cup sliced onion deep fried till crisp
15 Mint leaves
Marinate the chicken with *1 - 7 for an hour
Cook 1 cup rice with saffron, kewra leaf and 1 tbsp ghee till 75% done
Cook 2 cups rice with 2 tbsps Ghee and all the whole masalas till 75% done.
Remove masalas(easier if you have used a tea ball or muslin bag.
In a wok or a wide pot which can be brought to the table --
Saute the onions in oil till light brown, add the chicken(drained of marinade) and whole masalas(second hand ) Stir fry till chicken starts to sear slightly. Add the drained marinade and cook till just done. Top with the two rices, garnish with mint leaves and crisp fried onion and cook covered till rice is cooked al dente.

Had this again this Saturday evening at Suresh's place. It was bloody brilliant as usual. Mouth watering stuff Suresh.
