It is the unofficial national dish of Singapore, the Singapore Chilli Crab. There are many ways to cook this wonderful dish, this is how I cook it

Singapore Chilli Crab

Serves 4

2 x 1 kilo Crabs - Boiled, Cleaned, Cracked, Cut into pieces
500 gms Tomato puree
5-6 Fresh Red chillies chopped
1 large pod fresh Garlic - chopped
2 inch fresh Ginger - peeled & chopped
5 tbsp Tomato Ketchup
2 tbsp Black Bean Sauce
2 tbsp Oyster Sauce
1 tsp Black Soy Sauce
Juice of 1 Lime
Chopped Coriander for garnishing
Sugar, Salt & Pepper to taste
Oil to cook

Method :

Grind fresh red chillies, ginger and 1/2 garlic into a paste. Add tomato puree. Blend together. Mix together the Tomato Ketchup, Black Bean sauce, Oyster sauce, Black Soy sauce and Lime juice, set aside.

Heat oil in a wok, when its smokin hot, add the crabs and stir fry, add remaining garlic, tomato blend and mix well, cook for 2 mins. Add the sauce mix. Cook for 2 mins. Check for seasoning, add sugar/salt/pepper here. Serve garnished with coriander. Best eaten with breads.

My Stir Fry Chicken  

Serves 4

Ingredients :

500 gms Chicken breast - cut to 2 inch pieces
Marinade - 3 tbsp rice wine or dry sherry + 1 tbsp black soy sauce

2 tbsp vinegar + 1 tbsp sugar + 1 tbsp New Maggi Pudina Sauce
2-3 cloves of Garlic - chopped + 2 inch piece of Ginger peeled n chopped or 1 tbsp ginger n garlic paste + 3-5 Red chillies - chopped + 2-3 Spring Onions - Sliced diagonally 2 inch pieces fried in some butter n garlic + 1 tbsp corn flour mixed in 1/2 cup water + Salt to taste + Red chilli flakes for garnishing

Method :

Marinade the chicken, cover and keep in the fridge for an hour.

On high flame, heat some oil in a wok, fry ginger n garlic n red chillies for 1-2 mins, fry the chicken 4-5 mins, add vinegar, add sugar, add Maggi Pudina sauce and fry till chicken is done, add corn flour mixed with water, add the butter fried spring onions here and stir fry it into a frenzy :D Garnish with Chilli flakes. Serve. Can be eaten as a snack with your evening drink/starters. I have not tried this with prawns.

the pudina sauce sounds interesting, another sauce that I use with 'My own' chinese versions is Maggi's bhel puri sauce.   :D

In my mooluk,  New York City :) Actually they are a pair. The soft shell crab season is upon us - Had SSC the other day. Will have again over the weekend - Will upload the pics soon.

My Stir Fry Potatoes in Schezwan Sauce

Ingredients :

1/2 kg Potatoes - Half boiled, cut into chunks, jacket on
5 tbsp Schezwan Sauce (Ginger/Garlic/Onions/Red Chillies/Vinegar/Sugar/Salt/Sesame Oil/Corn Flour)
2-3 cloves Garlic + 2 inch Ginger - chopped
3-4 Green Chillies - chopped
2-3 Spring Onions - chopped
2 tbsp - Maggi Chatpata Sauce
1 tsp Lemon Juice / Vinegar
1 tsp Soya Sauce + 2 tsp Green Chilli Sauce
Sesame Oil for cooking

Method :

Heat oil in a wok, stir fry garlic, ginger, green chillies, spring onions till garlic turns slightly brown, add potatoes fry, add soya, green chilli sauce, maggi chatpata sauce, lemon juice/vinegar fry, add schezwan sauce now and stir fry some more, done. Garnish with chopped spring onions. Serve.

Unicorn, that looks delicious, I can see baby corn, onion, capsicums, snow peas(?). What's the other chunky thing?

My Stir Fry Paneer in Black Bean Sauce

Ingredients :

250 gms Fresh Paneer - cut into cubes
2 large Capsicums (1 Red + 1 Green) - cut to 1 inch pieces
1 large Onion - cut into 1 inch pieces
2 Spring Onions - chopped
5-6 Green chillies - cut half lenghtwise
2-3 cloves of Garlic + 1 inch Ginger - peeled n chopped
3 tbsp of Black Bean Sauce + 2 tbsp each of Oyster Sauce + Maggi Hot n Sweet sauce
Soya Sauce for marinating the paneer - 1 hour
Oil for cooking

Method :

Heat oil in a wok, fry ginger n garlic (can use paste) onions, fry capsicums, spring onions, green chillies, add the marinated paneer and fry some more, add the sauces. Here you can add 1 tbsp corn flour mixed in a little water to expand the dish and make some gravy. I made no gravy, was good. Also one can add baby corn and mushrooms to make it a propa main course dish.

Tomato, snow peas is correct. That chunky thing in there is water chestnuts...singhada I believe.
They use a lot of those in chinese food here in the US.

TOM YUM SOUP

The National food of Thailand, Tom Yum Kung (Hot n Sour Spicy Soup with Shrimps). You can add any seafood or you can use chicken as well, in that case you call it Tom Yum Kai (Chicken).

Ingredients:

1/2 kg medium-size shrimps - cleaned, tail on
5-6 mushrooms - cut into 8-10 pieces each
1 stalk lemongrass - cleaned, cut into 5 inch pieces
2 cups chicken stock + 1/2 tsp red chilli powder
10 peppercorns crushed + 3 inch piece of fresh ginger chopped
4 tbsp soy sauce + 3 tbsp lime juice
chopped coriander + salt to taste

Method:

Boil chicken stock, add 4 cups of water, add lemon grass and shrimps. When the shrimps turn pink, add mushrooms, ginger, peppercorns and salt. Boil for 10-15 mins. Remove the pot from heat. Add soy sauce, lime juice, and red chilli powder. Garnish with fresh coriander. Serve. Tom Yum Yum Soup is ready to eat :)

Gobi Manchurian

Serves 4

Ingredients ;

200 gms Gobi (Cauliflower) cut into bite sized pieces
3-4 tbps - Maida (All purpose flour)
2 tbsp ginger n garlic fresh chopped and 1 tbsp paste
2 capsicums/bell peppers - cut into 2 inch squares
1 med white onion cut long rings
2-3 spring onions chopped lenghtwise 2 inches.
Sauces - 1 tbsp schezwan sauce, 5 tbsp of tomato chilli sauce, 3 tbsp each of soya sauce n oyster sauce,  2 tbsp vinegar, 1 tsp red chilli powder
Salt to taste

Maida mixed in water for batter - add salt, red chilli powder, ginger n garlic paste and marinade the gobi in it for 25 mins. Deep fry the gobi till it turns golden crisp. Remove and keep aside.

Heat oil in a wok, fry spring onions, fresh ginger n garlic, capsicum, white onions together till done, add the sauces, vinegar fry for 5 mins, add the gobi in the end, mix well. Done.
I had it Veg Fried Rice :)

Chicken American Chop Suey

Ingredients :

250 gms Chicken, boneless cut into cubes or strips
500 gms tomatoes boiled/peeled/mashed
2-3 green capsicum cut into small squares
3-4 baby corn - half boiled cut half lengthwise
2 small carrots - half boiled cut in diagonal 2 inch pieces
1 Spring Onion - white chopped + green cut to 2 inch pieces
1 tsp garlic n ginger paste + 1 tbsp corn flour mixed in a little water.
1 tbsp vinegar + 5 tbsp hot n sweet sauce

Method :

In a wok heat oil and fry garlic n ginger paste, add chicken, fry till semi cooked, add capsicum, baby corn, carrots, all the spring onions & fry till chicken is done. Cook the mashed tomatoes in a little oil with garlic, add vinegar, add hot n sweet sauce, pour over the chicken, mix well, cook together for a few mins. Add 1 cup of water, bring to boil, add the corn flour. Serve with big portions of crispy fried noodles.

"My Own" Schezwan Chicken

Ingredients :

250 gms Chicken breast, cut to bite sized pieces
2 Spring onions cut long 3 inch pieces + 1 Capsicum cut lenghtwise
2 inch piece Ginger peeled and chopped
3 cloves Garlic chopped + 3 Green chillies chopped
4 tbsp Schezwan Sauce + 2 tbsp Sweet Chilli Sauce + 2 tbsp Oyster Sauce + 1 tbsp vinegar
1 tbsp black soy sauce + 1 tbsp corn flour mixed in a little water + Oil for cooking

Method:

Fry the chicken with the soy sauce and a little garlic for 15 mins or till brown, keep aside. Stir fry the ginger, garlic and green chillies, add the spring onions and capsicum for 5 mins, add the chicken and vinegar, fry together for 2 mins, add the sauces cook for 10 mins. Here the dish is actually ready to eat if you want a dry dish or add 1 glass of water, bring to boil and stir in the corn flour slowly, done. I had it with Veg Noodles. You can add more veggies in the dish like baby corn or mushrooms.

Here we have the Veggie version, batter fry the Gobi, prepared the veggies in the sauce and poured it over. Had it with Veg fried rice.

I am still a novice with regard to chinese cooking.  Going to watch this thread regularly.  I have read somewhere that the actual chinese dishes are not that spicy or tasty but a bit of bland.  What do you guys think of the authentic chinese foods?  Have you tasted any original versions?  What are the differences?  Let us discuss.

I've eaten chinese food and yes it is completely different.  To be fair it has to be classified by it's regions.
